Vegan Comfort Food: Lentil Chili
Ingredients
2 cups French lentils
1 cup red lentils
1 medium onion (about 1 cup chopped)
3–4 large carrots (about 1 cup chopped)
4 ribs celery (about ½ cup chopped)
1 large can diced tomatoes
1 can of water
¼ cup olive oil
¼ cup chili powder
1 tbsp ground cumin
1 tbsp garlic powder
2 tsp black pepper
Salt to taste
Directions
Heat your oil in a pan and add the onions. Sauté until translucent, about 5 minutes. Add the carrots and celery and cook for another 5 minutes.
Add a pinch of salt and your spices and cook, stirring constantly, for another minute or two.
Add the lentils, tomatoes, and water. At this point, add everything into the crockpot and cook on low for 8 hours or high for 4–6 hours. If on high, make sure to stir occasionally.
Serve with cornbread, over rice, or with a side of campfire flatbread. The red lentils break down and thicken the chili naturally, while the French lentils hold their shape and give it body. This is one of those dishes that's even better the next day, once all the flavors have had time to develop.
