One Pot Meals: Campfire Brisket

One pot meals are always one of my favorite ways to cook. They're easy to make and to clean up! And if you can make it over your campfire, what an even bigger bonus!

Brisket usually takes a while to cook, which is fine! Just make sure your fire is going all day and you'll have perfect, fork-tender brisket with potatoes, carrots, and onion just in time for dinner.

Ingredients

1 brisket, sized to feed your family
3 lbs potatoes, chunked (any kind will do)
1 medium onion, chunked
4 carrots, peeled and chunked
4 cups beef broth
½ cup red wine
2 bay leaves
Salt and pepper to taste

Equipment

Grill grate
Large cast iron pot
Foil

Method

Generously salt and pepper your brisket. Allow the grill to get hot and then char your brisket. Set aside. Warm the cast iron pot and place the brisket in with the onions, potatoes, and carrots surrounding it. Add your wine, broth and bay leaves. Cover with foil and cook for approximately 4–6 hours, or until the brisket is tender and pulling apart easily.

This is one of those meals where patience is the secret ingredient. Start it at noon and it'll be perfect by dinner. The smell alone will have your camping neighbors stopping by to ask what's cooking.
