Some evenings at the campsite, you want a dessert that feels genuinely special — something that makes everyone around the table go quiet for a moment. This chocolate mousse is that dessert. It's rich, silky, and deeply chocolatey, and the simple cherry sauce on top takes it to another level entirely. Make it ahead of time so it's chilled and ready when you need it.
Chocolate Mousse (Bonus Cherry Sauce!)
Chocolate Mousse Ingredients
2 cups heavy whipping cream (pint container)
1.5 cups chocolate chips
1 stick unsalted butter
1 cup sugar
Method
Whip the cream until stiff peaks form. Set aside.
Over a double boiler, melt the butter and add the sugar. Stir to dissolve. Add the chocolate chips and stir to melt. Remove and allow to cool at room temperature for just 5 minutes.
Bring out the whipped cream and stir in ¼ of the whipped cream into the chocolate mix. Work quickly to mix it all together before it cools too much.
Once combined, allow to cool for 30 minutes in the cooler.
Now carefully fold the rest of the whipped cream into the chocolate mixture. Do this slowly and carefully, ¼ of whipped cream at a time.
Once added, spoon into serving cups and refrigerate until set, at least 2 hours.
Cherry Sauce Ingredients
2 cups frozen black cherries
1 cup white sugar
½ cup water
Cherry Sauce Method
Add all ingredients to a small saucepan. Bring to a simmer and cook until a thick, syrupy sauce forms, about 20 minutes. Remember to stir every few minutes!
Spoon the warm cherry sauce over the chilled mousse just before serving. The contrast between the cold mousse and the warm sauce is part of what makes this so good. This dessert is special enough for a holiday meal at the campsite but easy enough that you'll want to make it whenever you have the ingredients on hand.
