The day after Thanksgiving is a beautiful thing at the RV park. Everyone's relaxed, the weather is usually perfect here in Corpus Christi, and the fridge is full of leftovers. This crockpot Thanksgiving soup is the best way to use all of it — it comes together quickly, cooks itself, and produces something so comforting and delicious that you'll almost forget it started as leftovers.
Crockpot Thanksgiving Soup
This soup is super easy to make with your Thanksgiving leftovers. You'll forget that it's made from leftover foods!
Ingredients
2 cups shredded turkey
1 rib celery, finely chopped
1 medium carrot, finely chopped
½ medium onion, finely chopped
2 tbsp olive oil
1½ cups green bean casserole
1 cup mashed potatoes
4 cups turkey broth
2 cups water
Directions
In a large pot, sweat the celery, carrot and onions in the olive oil until softened. Add everything into the crockpot.
Add the turkey broth, water, and turkey. Cook on low for about 4 hours.
When the liquid is hot, add the mashed potatoes and the green bean casserole. Allow these to "melt" into the hot turkey broth. This will make a creamy base. Cook for another hour or two on low.
The mashed potatoes dissolve into the broth and create a naturally creamy, lightly thickened soup that's rich without being heavy. A handful of fresh parsley stirred in at the end brightens it up beautifully. Serve with crusty bread or crackers and enjoy a truly stress-free day-after-Thanksgiving meal.
