South Texas winters are mild, but they have their chilly evenings — especially out on the bay when the wind picks up. Those are the nights when a big bowl of this Tuscan soup is exactly what you want. It's a one-pot meal that comes together in about 30 minutes, and it's the kind of thing that makes the whole RV smell incredible while it's cooking.
Easy Tuscan Soup
Ingredients
6 oz sweet Italian sausage (not in casing)
6 oz hot Italian sausage (not in casing)
1 bunch kale
1 medium onion (about 1 cup chopped)
2 large carrots (about 1 cup chopped)
4 medium potatoes, washed well
2 quarts chicken broth
1 tbsp garlic
Salt and pepper to taste
Method
First, prep all ingredients:
Chop your onion and carrot into medium dice.
Chop your kale into bite-size pieces, removing the stem first.
Slice your potatoes into rounds about ¼ inch thick.
Mix the two sausages together until combined.
Heat up 2 tbsp oil in a pot. Add your onions and cook until translucent. Add your carrots and garlic and cook for another 5 minutes, stirring occasionally.
Add your potatoes and broth. Bring to a boil and start dropping pieces of the sausage in until it is all added in small, bite-sized pieces. Add the kale and season with salt and pepper. Enjoy!
A splash of heavy cream stirred in at the end makes this even richer and more satisfying — similar to the famous Olive Garden version if you're familiar with it. This is also excellent the next day, though the potatoes will absorb a bit of broth overnight. Just add a little extra broth when reheating.
