When you're cooking at the campsite, you want recipes that are simple, fresh, and reliably good — and this lemon pepper chicken delivers on all three. The marinade takes five minutes to make and keeps in the fridge for up to two weeks, so you can prep it at home before your trip and have great chicken ready to grill from the first evening. Perfect for a summer evening at Colonia del Rey RV Park with a cold drink and the Gulf breeze coming through.

Lemon Pepper Marinade

Yield: 1 cup

Ingredients

⅔ cup lemon juice
1 tsp salt
1½ tbsp fresh cracked black pepper
⅔ cup olive oil (not extra virgin)

Combine all ingredients. Store in an airtight container in the refrigerator for up to 2 weeks.

Chicken breasts
Lemon pepper marinade
Grill grate

Method

Marinate your chicken breasts for at least 4 hours. Do not wipe off excess marinade — you want the pepper to be sticking to the chicken.

Grill until done on a hot grill, either over your campfire or on a regular grill. The citrus in the marinade caramelizes beautifully over high heat and creates a slightly charred, deeply flavorful crust.

This recipe doesn't need to be grilled. It's excellent for baked chicken too! You can even marinate a whole chicken before roasting it in a camp oven.

Serve with blistered vegetables (our next recipe!) and a piece of campfire flatbread for a complete campfire meal that feels anything but rough-and-tumble.
