Pierogies and Kielbasa Crockpot Soup: Ultimate Comfort Food on Wheels — Colonia Del Rey RV Blog

If you love kielbasa and pierogi nights, this crockpot soup version takes everything great about that combination and turns it into something even more satisfying. It's one of those recipes that seems too simple for how good it turns out, and it's exactly the kind of dish that makes the crockpot one of the most valuable pieces of equipment in your RV kitchen. Make extra — everyone will be wanting seconds.

Pierogies and Kielbasa Crockpot Soup

Ingredients

20 mini pierogies
10 large pierogies, cut in half
1 can sauerkraut, drained
1 link kielbasa, cut into rounds
4 tbsp butter
1 onion, chopped
2 tsp garlic, minced
1 quart chicken stock
1 quart milk
1 cup sour cream
Salt and pepper to taste

Method

In your crockpot, melt your butter and add your onions and garlic. Cook for a few minutes. Add the rest of the ingredients except for the sour cream and turn on low for about 4–6 hours. Right before serving, stir in the sour cream. Enjoy!

A small handful of fresh chives or a little crispy bacon crumbled on top takes this over the top. This soup reheats beautifully the next day, so don't be afraid to make a big batch. Perfect for cool winter evenings when you're settled in at the park and don't want to venture back out after dinner.
